As a longtime teacher and also someone who eats poultry, I read New Rules Say Poultry Plants Can Inspect Their Birds (Aug. 1, 2014) with astonishment. At the same time the US Department of Education ramps up standards and inspection rules for teachers, the USDA's Modernization of Poultry Slaughter Inspection rules decrees "Trust the slaughter house workers" to inspect themselves.



This decrease in federal oversight flies in the face of the 2008 Consumer Reports finding of "more deaths attributed to poultry than to any other commodity."



Look for more salmonella in the U.S.--and don't blame teachers for this one.
